Extra virgin olive oil obtained from the fruit of olive trees (Olea europea, L) of varieties Arbequina, Royal, and Morrut, by mechanical or other physical means that do not alter the oil in any way, and preserve the flavor, aroma, and characteristics of the fruit from which it is obtained.
These are well structured, full-bodied oils, the elements of whose overall flavor are nicely distributed. They are fragrant, pleasantly clean, and scented with hints of Arbequina, the traditional local variety. Depending on when the olives were harvested, two different styles emerge when tasting:
- Fruity: obtained from early harvested olives, greenish in color, fuller-bodied, and with a faint suggestion of bitter almond in the flavor.
- Sweet: obtained from olives harvested later, yellowish in color, freer flowing and, as the name suggests, sweeter tasting.
- Acidity: less than 0.5
- Moisture. no greater than 0.1%
- Peroxide value: maximum 15
- Impurities: no greater than 0.1%
- K 270 maximum 0.15
Production / Processing method
The olive groves in this area are generally marked out in traditional patterns based on a square or an equilateral triangle, and plantation density is around 125 trees per hectare (2.5 acres). The farming practices applied are those traditional to the production area. Harvesting is done by hand picking, directly from the tree, and the olives are delivered to the mill on the day they are picked, so that they can be ground within 72 hours of being harvested.
Geography / Relief and climate
The area's topography is varied, with most of the terrain being carboniferous, much of it Jurassic and Cretaceous, and marine and continental Miocene. There are various types of quaternary deposits and some outcrops of granitic or other eruptive rocks. Altitudes range from highs of 1.000 m (3,280 ft) to lows of 200 m (656 ft). The climate is maritime-influenced Mediterranean, with prevailing north-westerly winds known as Mestral, and warm winds known as Llabeig. Average annual rainfall is around 400 to 500 mm (15.74-19.68 in). Temperatures can be extreme, from 40º C (104º F) to -5º C (23º F), the annual average being 16º C (60.8º F).
