The Cava Academy Opens in London to Make Local Sommeliers Cava Experts
Wine industry professionals will be heading to London next month for some very special training at the Cava Academy, which is opening its doors once again. The three-day in-depth course will be held over three weeks and is aimed primarily at sommeliers in the UK who want to learn more about cava or expand on their existing expertise. The content has been officially approved by the DO Cava Regulatory Council and each session will last about 4 hours.
A group of 40 professionals will be selected to participate, and they will receive an Official Cava Sommelier accreditation from the president of the regulatory council, Javier Pages, upon completion. This presentation will be held in London on December 2nd.
The first session will be on November 4th and will cover history, geology and viticulture. Participants will taste base wines, indigenous varieties and young wines, and they will be led by course tutors Rebecca Gibb MW and Patrick Schmitt MW. The second session will be held on the 11th, and will cover viniculture, ageing and paraje calificado, and students will sample reserva, gran reserva and cava de paraje calificado. The teachers will be Lenka Sedlackova MW and Sarah Jane Evans MW. The final session, led by Fiona Beckett and others, will be held on November 18th. It will cover topics such as gastronomy, the perfect serve, and commerce, and participants will enjoy a food pairing with cava and also take an exam.
