Spanish-born, London-based chef José Pizarro is offering a new product as part of his eponymous gourmet line of foods. This time it’s a Pedro Ximénez Reserve sherry vinegar. This mahogany colored sweet and sour vinegar is made with PX wine that has been aged in American oak barrels for at least 2 years. It has a complex aroma that maintains the intense notesof sherry vinegar but also includes sweet wine.
This is an excellent sherry vinegar for marinades, macerations, reductions, salads and dressings as well as for fish, legumes and game. For this project, Pizarro collaborated with the family-run business El Majuelo, a veteran in the sherry vinegar industry, saying “We work with artisans that we know personally, who we know respect tradition and care about their products throughout the entire process.” Other José Pizarro products include Gordal olives; red, white, rosé and sparkling wine; and olive oil.
When Pizarro’s not growing his product line he runs four restaurants in London and Esher: José Tapas Bar, Pizarro Restaurant, José Pizarro, and The Swan Inn, where he feeds around 4,000 people each week. He’s also written five cookbooks and he is a regular contributor to TV shows on Channel 4 and the BBC. The chef has been named one of the 100 most influential Spaniards in the world.
