Top Chefs Prepare for Madrid Fusión in January

Ferran Adrià has got some big news to share, and it’s all coming out at the Reale Seguros Madrid Fusión / Saborea España event, to be held in Madrid from January 28th through the 30th, 2019 at the Palacio Municipal de Congresos.

The superchef, who has more or less stayed away from culinary conferences for the last few years, is expected to announce his plans for elBulli1846, his new project in Cala Montjoi. His presentation is entitled, “elBulli 1846: First call for the creative team”.

Ferran Adrià aside, this major event will bring together more than 100 chefs, who will offer more than 60 cooking demos and 21 training workshops. There will also be 15 competitions, as well as auctions and awards, among them Chef of the Year.

Participating chefs include Rene Redzepi, Joan Roca, Quique Dacosta, Eneko Atxa, Ricard Camarena, Rodrigo de la Calle, Macarena de Castro, Albert Adrià, Andoni Luis Aduriz, Elena Arzak, Josep Roca, Mario Sandoval, Dani García, Ricardo Oteros, Marcos Reguera, Kiko Moya, Ángel León, and Isaac Loya. The workshops and cooking demos are entitled “The world in a can,” “Alternative techniques to prepare seafood,” “Cooking with spices,” “Cooking and eloquence,” “The versatility of lamb,” “Foie gras: Tradition and evolution,” and “New applications in legumes: salsas, thickeners, and vinegars”.
