The Institute of Culinary Education in New York City is offering a special course this summer to teach students how to organize “the ultimate soiree.” Summer parties are a great way to gather friends to beat the heat together, but the host or hostess must have a plan for feeding his or her guests.

ICE is offering a special course on Cocktail Parties, Market Mixology, and the Tapas Party, at which participants will learn how to make “an impressive selection of small plates featuring all the flavors of the Mediterranean.” This includes: patatas bravas (fried potato squares topped with a sauce) with garlic alioli and chives, ham croquettes, tuna stuffed piquillo peppers with salsa verde, membrillo with Manchego and almond pintxo, bread with tomato and salt-cured anchovies, and to wash it all down, cava-sangria.

After students learn how to make all these party-perfect dishes, the only thing left to do will be to eat them!
