Spanish Chef Fernando Canales Offers Delicious Dining Experience in Beirut

The flavors of Spain will be front and center in Beirut at the end of this month, thanks to a collaboration between Michelin-star chef Fernando Canales, the Spanish Embassy, and Eau de Vie restaurant at the Phoenicia Beirut Hotel.

The chef’s mouthwatering Basque cuisine will be on everyone’s lips there from September 26th to the 28th. Canales and his team will prepare a meal featuring the flavors of northern Spain, including lobster salad with tomato and saffron, tuna with sumac, truffle ajoblanco with asparagus and shrimp, scallops with fried spinach and basil, octopus with mojo and alioli with honey, and lamb with roasted eggplant alongside hollandaise sauce with cardamom and cheese.

Canales is known for his passion and his cooking philosophy, which focuses on respect for ingredients’ seasonality. Said the chef, “Lebanese cuisine has something in common with Basque cuisine: the search for excellence in each dish. Harmony, delicateness and pleasure of savoring all the flavors.”

Canales runs Restaurante Etxanobe and has received many distinctions and accolades during his career. He is constantly focused on improving and innovating. He participated in the same collaboration, with the same hotel, back in 2015. The hotel, located in Beirut, opened for business in 1961.
