The Cava Academy, a new initiative in London, recently celebrated its first graduating class. The course was held over three days in July at 67 Pall Mall, an exclusive member’s only wine club.
The 40 participating students, all of them sommeliers from restaurants in the UK as well as from Norway, received intense training in six different areas, including the history and regulations related to DO Cava, cava pairing, single estate cava classification, and cava-making and different varieties.
The following wine professionals were course lecturers: Sarah Jan Evans MW, Richard Hemming MW, Lenka Sedlackova MW, Fernando Mora MW, Matthew Longuere MS, and Silvia Grimaldo, the Director of Communication for DO Cava.
After completing their training, students were required to take a theory and tasting exam. Those that passed received a diploma and a small silver plaque declaring them “Academist and Official Member of the Cava Academy.” Ceremony attendees included Carlos Bastarreche Sagües, the Ambassador from Spain the UK; Maria Naranjo, Director for Food and Gastronomy at ICEX Spain and Export and Investment; and Pedro Bonet, President of DO Cava.
According to Bonet, “The Cava Academy has been a very successful initiative by the DO Cava and we have been delighted with the response from some the UK’s leading sommeliers that have wanted to take part. Later this year we will be expanding the program to the other important export markets for Cava: Belgium, Holland and Germany,” according to Bespoke Drinks Media.
