It’s Soup Season - Enter Crema de Verduras

Taking a look at how Spain does seasonal comfort food, we explore the different types of crema de verduras de temporada - easy to make soups with a Spanish twist!

With the return of the colder winter months, we take a look at how Spain does comfort food, namely in the form of cremas de verduras de temporada - creamy seasonal vegetable soups. These are so easy to make, using your choice of seasonal veggies simmered together with onion, stock, cream, extra virgin olive oil, salt and pepper, then whizzed up for a silky smooth finish. Get inspired with these traditional Spanish crema de verduras recipes, you can even try personalizing them with your own twists.

Crema de Zanahoria - Simple and yet so tasty, cream of carrot soup is a popular root vegetable soup in Spain. For more depth of flavor, cook a carrot and tomato variation and garnish your bowl with a few drops of sherry vinegar - try Vinagre de Jerez DOP

Crema de Calabaza - Pumpkin isn’t just for Halloween, it’s good for the whole winter season! Sometimes slightly spiced with nutmeg to bring out the cream, you can also add heartiness to this soup by cooking in lentils and smoked paprika - that’s Pimentón De la Vera DOP of course!

Crema de Calabacín - Possibly the Spanish favorite of the marrow family - when it comes to soups anyway - zucchini makes a great creamy soup. It is typically made with potato for body but, to give it an umami  twist, top it with caramelized onion or shavings of jamón Ibérico DOP

Crema de ChampiñonesMushroom picking gets well underway during the fall season in Spain, so a simple cream of mushroom soup can be heightened by using a variety of local mushrooms. To give it a gourmet finish, garnish it with Spanish black truffle - trufa negra

Crema de Puerros - Spain also loves its leek - and potato - soup, with plenty of recipe variations. For example, in Catalunya during calçot season, this native leek-like spring onion is made into a similar soup. For a palate-pleasing sweet/savory punch, try your leek soup with pear and saffron Azafrán de La Mancha DOP.
