Simón Martín: Excellence in Ibérico Products
Founded by Simón Martín Mateos in 1907 in the town of Guijuelo, Salamanca (Castile-León), Spanish company Simón Martín has been passed down from generation to generation, each one charged with preserving the quality and traditions of the company’s prestigious Ibérico hams for the one to follow.
Today the success of the company Simón Martín is in the hands of Simón Martín Bernardo, the fourth generation of this Castilian family and the current steward of this endeavor—and his efforts have not been in vain. In this video, Simón Martín explains these factors, as well as the history of his family’s company, how its products are made, and why it will soon be even easier to find these excellent Ibérico pork products in global markets.
As recently as 2019, the Iberíco hams and other cured Ibérico pork products made by Simón Martín racked up no-less-than twelve gold medals at the prestigious IFFA (International Trade Fair for the Meat Industry) awards in Frankfurt, Germany. Other awards over the years have included various gold medals at the Superior Taste Awards, and at least two-dozen gold medals at previous editions of the IFFA awards. One of the crowning achievements for this company, however, was undoubtedly when Simón Martín Ibérico ham was named the “Best ham” in all of Spain in 2010, at the first official tasting of Ibérico hams with Denomination of Origin status.
Despite these and other recognitions, Martín would certainly be the first to tell you that he and his family can’t take all the credit for the excellent quality of their Ibérico hams and other pork products. Indeed, many of their characteristics stem from the variety of factors that make Guijuelo such an important and renowned production area for these Spanish gastronomic treasures.
