The TV show put the unique dining concept behind Spanish restaurant Pilgrim, inspired by the Camino de Santiago, on full display

A unique and very popular TV series on BBC Two in the UK has catapulted a Spanish dining experience to fame. “My Million Pound Menu” puts restaurateurs and entrepreneurs in the spotlight as they pitch their ideas to top investors in the food industry. Those investors watch the chefs and their teams serve paying customers over three days before making a decision to back their project.

One of the concepts that triumphed on the show is called Pilgrim. Put together by three friends (Jamie Duffield, Dave Bone and Anthony Power), their project was inspired by a trip to Spain to experience the Camino de Santiago. Duffield, who completed the journey, was so taken with the food and drink of northwest Spain that he decided to launch a dining concept revolving around the area’s local recipes and flavors. And thus, Pilgrim was born.

Their restaurant offers a unique spin by including dishes named after specific locations on the Camino with an indication of the number of kilometers to the end of the journey, which is technically the resting place of St. James the Apostle. Examples include The Pamplona (710 km), which is Iberico pork short rib braised in cider and served with charcoal talo, cured onions and smoked celeriac; and St Jean Pied de Port (796 km), king scallop with mushroom and sherry consommé. Both dishes are paired with wines, the former with a txakoli and the latter with a Fino sherry.

Pilgrim used to have two pop-up supper clubs in London, and will open their last one for a short period in February. They will then head north to open a flagship restaurant in Liverpool in April 2019.
