El Invernadero is Poised to Open in Madrid
This spring/summer, El Invernadero will open its doors on the tony Madrid street Ponzano, filling vegetable-lovers and adventurous gastronomes with joy.
This restaurant, which was previously located at La Torre Art Box Hotel in the Madrid town of Collado Mediano, will now bring its unique cuisine to the capital city, in a move that the chef comments on his website, “will be where we put down roots and (where) our green revolution can bloom more exuberantly than ever, with an eye towards a very lush future.”
The restaurant will continue to promote de la Calle’s philosophy of a “Green Revolution”, through which he has long championed the use of vegetables and plants in the kitchen. Madrid diners will be particularly eager to get a first-hand look at the chef’s use of spirulina – a blue-green algae declared the “Millennium Food” by UNESCO – which he presented this past January at international culinary conference Madrid Fusión.
And as for his replacement at La Torre Art Box Hotel, chef Fernando Limón (of La Sopa Boba restaurant in Alpedrete, Madrid) opened Koma there in February.
