Spain may be known for its Ibérico ham, but don’t think that vegetables don’t have their place on the food scene. The recent We’re Smart Think Vegetables competition yielded a list of the top 100 vegetable restaurants in 2019, which included several Spanish locales.
Coming in at number one on the list is Xavier Pellicer. His restaurant (also called Xavier Pellicer) in Barcelona has now been ranked in the top position for the second year in a row. The chef is breaking new ground in particular by creating an exclusive area in his restaurant for 16 customers, where he serves a highly creative 9-course tasting menu.
Coming in at 14 is Ricard Camarena, who also ranked in the top 25 last year. His Valencian locale, called Ricard Camarena, serves up delicious flavor combinations and he’s considered a “vegetable chef pioneer.”
El Invernadero, in Madrid, ranked 23rd. This is a project from Rodrigo de la Calle, and his vegetable haute cuisine is in a league of its own. At The Green Spot, in Barcelona, which came in at number 27 on the list, the chefs are veritable experts in vegetarian and vegan creations. Azurmendi also made the grade, ranking 68th. This cutting-edge restaurant in the Basque Country by Eneko Atxa is a shining example of sustainable cooking. He offers a downright magical experience and is a strong proponent for the use of herbs and flowers in his cooking. La Bien Aparecida is an outstanding restaurant in Madrid which offers a “beautifully structured menu with vegetables in the lead.”
