Cebolla Fuentes de Ebro PDO
Cebolla Fuentes de Ebro are understood as being bulbs from the species Allium cepa L. obtained from the varieties Cebolla Dulce de Fuentes and Cebolla Blanca Gruesa de Fuentes, from the native plant population traditionally grown in Fuentes de Ebro and registered in the Common Catalogue of Varieties of Vegetable Species.
Organoleptic profile: mild flavor, low pungency, very tender and succulent inner layers; when eaten they leave very little aftertaste. The defining feature of these onions is their low pungency; they are well known for their mildness and slightly sweet flavor.
Color of outer layers: White to straw-colored. In the case of early onions, the outer layer is a greenish-white color.
Internal color: White.

Production / Processing method
Before planting is done, the soil is aerated and the surface is prepared (subsoil plowing, tilling and so on). Planting is done using the direct sowing system or by transplanting seedlings.
The methods followed for soil care, watering and pest or disease control are the ones considered to be the most appropriate at the time.
When harvesting 'early onions' the bulbs are pulled out of the soil with the stalk intact and in the case of 'mature onions' left to ripen longer, the stalks are left to dry before the bulbs are harvested.
The onions are transported using methods that prevent them from being bruised or damaged.
Handling consists of harvesting, cleaning, sorting, selecting and processing, if applicable. Processing may include peeling the bulbs.
The onions are then packaged or wrapped.
The onions must be stored and packaged in the geographical area protected by the Designation of Origin, as they can deteriorate very easily and transporting them may adversely affect their quality. This practice also safeguards origin and traceability until the onions reach their destination.
Geography / Relief and climate
The area where Cebolla Fuentes de Ebro onions are grown is located in the central Ebro valley, a region with a well-defined continental Mediterranean climate. This is the so-called 'Tertiary Ebro Depression', which follows the classic model of a filled river basin with a clear granulometric distribution. The area is characterized by fertile soil with an abundance of karst, a high calcium carbonate content and a high pH value, plus a steppe microclimate with frequent strong winds and scarce rainfall. The area has a typically arid, windy continental climate. The dry climate is reflected in the low levels of rainfall recorded. The continental climate produces very hot summers and cold winters. The production area is also affected by the 'cierzo' wind, a strong, dry and usually cold wind that blows from the Ebro valley.
