The flavors of Spain are available in Chicago thanks to a new project called Mama Delia. It’s a restaurant, a sherry bar, and a gourmet market all in one, based in Wicker Park. Offering a contemporary Spanish culinary experience, Mama Delia seeks to“[reflect] the current culinary direction in Spain of embracing cultural diversity while respecting its roots,” according to fsrmagazine.com.
The store sells a wide selection of unique gourmet foods from Spain and small production wines. This includes tinned seafood such as cockles, razor clams, mussels in escabeche and sardines with Padrón peppers; all-natural potato chips fried in olive oil; dried spices, such as saffron and paprika; and cold-pressed and smoked olive oils, some of which are limited production. Even better, the chefs are around to answer customers’ questions and there will also be wine tastings, product tastings and cooking classes offered in the future.
As for the sherry bar, Mama Delia features a long marble counter where people can sip on a range of sherries and snack on artisanal cheese and cured meat from Spain, including 100% acorn-fed Ibérico ham from Cinco Jotas.
In the restaurant, the goal is to highlight regional products and a range of flavors, compositions and cooking techniques. Dishes on offer include paella, huevos rotos, foie gras terrine with quince jam, and boneless ribeye steak from Galician cows. Customers can pair their food with a selection of natural and organic wines and beer from Spain and also Portugal.
