The restaurant is helmed by Spanish chef Ricardo Sanz, who has managed to bring the tradition, precision and delicacy of Japan together with meticulously chosen Spanish ingredients (such as almadraba blue fin tuna and Ibérico bellota ham), while also offering a varied wine selection, wherein Spain plays a starring role.
