Our tour of the cellars of some of the finest restaurants in Spain leads us to someone who is an expert at pairing Spanish wines with Japanese cuisine: Miguel Ángel Millán, the Sommelier at two-starred Kabuki Restaurant in Madrid. Will you follow his suggestions?

f there is a reference point in the Spanish capital for haute Japanese cuisine, it is Kabuki. With two Michelin stars, Kabuki has become a mecca for fans of Japanese food in Spain. The restaurant is helmed by Spanish chef Ricardo Sanz, who has managed to bring the tradition, precision and delicacy of Japan together with meticulously chosen Spanish ingredients (such as almadraba blue fin tuna and Ibérico bellota ham), while also offering a varied wine selection, wherein Spain plays a starring role.

The restaurant’s sommelier is Miguel Ángel Millán, a consummate industry professional who has chosen three, top-tier Spanish wines for Foods & Wines from Spain that harmonize perfectly with dishes on the menu at Kabuki.
