Sherry Brandy, the Spanish Spirit from Andalusia that is a Warm Pleasure

This noble spirit has lots of character due to its maturation in sherry casks. It can be enjoyed neat, on the rocks, or in mixed drinks and cocktails.

Diego Cabrera, one of the top barmen in Spain, says his customers at Salmón Gurú bar in Madrid often react with surprise when he tells them the cocktail they’re drinking contains sherry brandy. This spirit is made by distilling base wine, usually made from Airén grapes or, less commonly, Palomino grapes, and is protected by its own DO. Amazingly it is still relatively unknown in Spain, especially among youngest generations.

Made in Andalusia’s traditional sherry zone—Jerez de la Frontera, Sanlúcar de Barrameda and El Puerto de Santa María—this particular brandy takes advantage of the local climatic conditions and the American oak barrels where it is aged, which have previously been seasoned with one of the traditional styles of sherry (Fino, Amontillado, Oloroso, Pedro Ximénez...). The result is a lovely fragrant, warm, Mahogany-colored drink that can be enjoyed in many different ways. First is neat in a balloon glass, filled beyond one-fifth of its capacity, making it easy to swirl the brandy round the glass to “awaken” aromas and flavors. It also works on the rocks in a tumbler with solid ice cubes, which keep the drink cool and prolong enjoyment.

And, of course, it can be used in different mixed drinks and cocktails with the addition of cola, ginger ale, orange juice... Chefs are also big fans of sherry brandy and often use it as a pairing for
chocolate desserts. Luxury and tradition at its best!
