Later this month, the 13th Annual StarChefs Congress will be taking the Brooklyn Expo Center by storm. The theme of this year’s event is “Cooking with Respect: Better People, Better Food,” and over 150 industry leaders are expected to attend from all over the world. There will be food carts and pop-ups, challenges and competitions, and plenty of cooking demos and thought-provoking presentations from chefs.
Spain will be represented by the famous pastry chef Oriol Balaguer, who will take to the main stage on October 22nd to talk about “The Sweet Cuisine.” Balaguer will offer a preview of his latest boutique, which is also his seventh. He will also “[build] a multi-sensory, texturally layered [dessert] that [speaks] to the here, now and future of pastry.”
Balaguer has won countless awards, among them Best Pastry Chef in Spain, Best Dessert in the World, Grand Prix au Chef Patissier in 2018, Best Artisan Panettone in Spain in 2017, and Best Artisan Butter Croissant in Spain in 2014, among others. One of his books, La cocina de los postres, was named best dessert book, he works with the Miró Foundation to provide chocolate creations that pay homage to the artist, and he has owned several bakeries and confectionary shops over the years. He has been a pioneer in creating sugar-free desserts, making them suitable for people with diabetes, and he’s a strong proponent of flavor experimentation and dramatic marketing techniques.
