The Manzano family project achieves the highest possible recognition by the Guide, which also recognizes three new two Michelin star and 32 new one Michelin star restaurants
The Michelin Guide presented its 2025 edition for Spain in Murcia, in a gala that celebrated the excellence of the country's gastronomy and the positive state of its culinary industry at the moment. The star of the night was the restaurant Casa Marcial, run by the Manzano family, in the town of La Salgar (Asturias), which achieved the coveted three Michelin star recognition.
Helmed by Nacho Manzano and his sister Esther, Casa Marcial stands out for a cuisine that is deeply rooted in local tradition, combining quality products with lots of creativity and imagination. Among the most outstanding dishes are its iconic jamón serrano croquetas, its pitu de caleya (free-range chicken), and others that demonstrate a singular elegance when combining flavors, such as trout in its essence, spring juice and yeast, and tempered squid with ink sauce, fabe bean mole and scoby.
The guide also included three new restaurants with two Michelin stars. They are Alevante, in Chiclana de la Frontera (Cádiz), where the fish—from tuna and sea urchin to sea bass—really stand out, and LU Cocina y Alma, in Jerez de la Frontera (Cádiz), with products such as oysters from Conil and coquina clams from the Doñana cove. Both are in Andalusia. Galicia also added a new two star restaurant: Retiro Da Costiña, in Santa Comba (A Coruña), where regional classics such as scallops, pulpo and bogavante (clawed lobster) can be enjoyed in well-developed recipes.
The one-star Michelin category was particularly generous this year, with 32 new additions. Catalonia and Madrid topped the list, with distinctions for restaurants such as Mae and Fishølogy (Barcelona) and Pabú and Chispa Bistró (Madrid) although restaurants in other regions also shined bright, in Andalusia: Mesón Sabor Andaluz (Alcalá del Valle, Cádiz), Aragón: Ansils (Anciles, Huesca), the Canary Islands: Muxgo (Las Palmas), and Murcia: Frases, which joined the prestigious list.
Additionally, last year's 15 Michelin stars were maintained: ABaC (Jordi Cruz, Barcelona), Akelarre (Pedro Subijana, San Sebastián), Aponiente (Ángel León, El Puerto de Santa María, Cádiz), Arzak (Elena Arzak, San Sebastián), Atrio (Toño Pérez, Cáceres), Azurmendi (Eneko Atxa, Larrabetzu, Vizcaya), El Celler de Can Roca (Joan Roca, Girona), Cenador de Amós (Jesús Sánchez, Villaverde de Pontones, Cantabria), Cocina Hermanos Torres (Javier and Sergio Torres, Barcelona), Disfrutar (Oriol Castro, Mateu Casañas and Eduard Xatruch, Barcelona), DiverXo (Dabiz Muñoz, Madrid), Lasarte (Paolo Casagrande, Barcelona), Martín Berasategui (Martín Berasategui, San Sebastián), Noor (Paco Morales, Córdoba), and Quique Dacosta (Quique Dacosta, Denia, Alicante).
Restaurants from Spain with a star
Spanish cuisine beyond Spain has also received recognition. International restaurants such as Xiquet by Danny Lladó (Washington DC, United States) and Sabor (London, United Kingdom) also have stars. Both are Restaurants from Spain (RFS), a certification that recognizes and supports restaurant initiatives around the globe that showcase Spanish products and are focused on authentic cuisine from Spain that guarantee the quality standards of those establishments.
