Londoners who appreciate great Spanish food will be thrilled to hear that Brindisa has expanded its empire with a new locale in London. Brindisa Kitchen Bar, as it’s called, is located in Borough Market Kitchen. This section of Borough Market hosts 20 different stands that offer hot and cold dishes served at large communal tables. All of the stands were asked to participate based on the high quality of their food, the skill of their chefs and the provenance of the ingredients they use.
Brindisa Kitchen opened on January 6th and, according to the founder, Monika Linton, “Our market bar devotes its menu to the foods found as you go north, from Andalusia to Asturias. This allows us to tighten our focus and get closer to the fascinating variety of Spain’s mini lands or comarcas… We can delve deeper into these local cultures: their recipes, crops and ingredients and indulge in their one pot and family dishes and seasonal food habits.”
From the fresh fish, such as rockfish, trout and salt cod to the wild game, legumes, and lamb and the selection of award-winning cheeses, their unique culinary is expected to be very well received by market vistors. Mouthwatering options on the menu include Zamorano sheep’s cheese taquitos with apple paste, green lentil stew with cider and chorizo, grilled squid stuffed with morcilla and confit onions, and crab and judión bean stew.
